This Cognac is vibrant and dancing at over 75 years old!  The depth is incredible as it evolves in the glass and takes you on a journey into the past with each sip, delivering both sweet and savory notes of bright citrus, peach, dark chocolate tart, caramel, old wood, and light spices.  It commands your attention with both an incredible concentration and a lightness on the palate that the best old spirits bring. 

More tasting Notes: "This is a deep, mouth-coating but lively Fins Bois, with all the great depth and complexity we've come to expect from Guilhem's selections — but also a welcome brightness and sweetness that calls you back for more each sip. 

On the nose: old barn, dark caramel. Chocolate tart, leather, walnuts and rancio on the palate from the start through the finish, with present but integrated wood. This gives us 21 year old Willet rye vibes, but in a 60+ year old Cognac..."

Situated in the lowlands of Cognac, this region is an old lagoon area on limestone bedrock from the Purbeck Era. The old producer who sold this cask to us had no heir, and feeling that death was upon him, he decided to find a buyer."
